At the Market

The market is now closed for the 2011 season. We’ll be back in business the first Saturday in May. In the meantime, a number of our vendors are continuing to sell produce, baked goods, honey, maple syrup, jams and jellies at the Local Bounty store, Route 83, Coshocton -- near Lake Park. Stop in and check it out!

Veggie Frittata

Olive oil for pan
8 eggs
½ cup milk
Chopped asparagus, spinach, or chard (or a combination)
Salt and pepper to taste
Feta or other cheese (optional)

Beat eggs and milk together, then pour into oiled, oven-proof skillet over medium heat. Promptly add vegetables and stir evenly into egg mixture. Add cheese, if desired. Cook on low without stirring until eggs are mostly set, then transfer to oven and broil 2-4 minutes, until lightly golden on top. Cool to set before serving.
