At the Market

The market is now closed for the 2011 season. We’ll be back in business the first Saturday in May. In the meantime, a number of our vendors are continuing to sell produce, baked goods, honey, maple syrup, jams and jellies at the Local Bounty store, Route 83, Coshocton -- near Lake Park. Stop in and check it out!

Spring Quiche with Asparagus

Beat together and set aside:
3 eggs
1 cup evaporated milk
¼ teaspoon salt
¼ teaspoon pepper
1 tablespoon fresh rosemary, chopped (or 1 tsp. dried), OR ¼ cup fresh dill, chopped

Place in 9-inch, unbaked crust:
1-1½ cups asparagus, cooked slightly and chopped
1 cup shredded Swiss cheese (reserve ¼ cup for topping)
½ cup fried, crumbled bacon, OR diced, cooked ham
¼ cup chopped green onion or onion

Pour egg mixture over and sprinkle with reserved cheese. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake until browned on top and set in the middle, another 25-30 minutes. Allow to cool for 10-15 minutes before cutting and serving. Serves 4-6.
